make your own ginger cucumber salad

Ingredients:
½ cup rice or white vinegar
One 1-inch piece fresh ginger, peeled and minced or grated.
3 tablespoons sugar
1 teaspoon salt
2 large cucumbers, peeled, halved, seeded and sliced.
3 tablespoons oil
1 onion, sliced
½ teaspoon ground turmeric
Sesame seeds

Blend the vinegar, ginger, sugar, and salt. Add the cucumbers and toss to coat. Let the mixture stand for at least one hour to marinate. It is best to find room in the refrigerator to keep the cucumbers fresh, especially if it is warm. After marinating, drain away the excess liquid.
Before serving, warm the oil in a skillet with the heat turned to medium. Once the oil is warm, add the onion and turmeric. Once the onions are soft, remove from heat. All the entire skillet contents to the cucumbers. Top with sesame seeds if desired and serve.

There are a few varieties of this dish, where you can add green chilies for a spicier dish, or firm tofu for a more substantial dish. If you decide to add tofu, be sure to brown it in the skillet, before the onions. If you want to add peppers they can be cooked with the onions.
