make your own pasta
Making pasta is so so simple and is quick to do. Again, with everything on this site, you get to control what goes in to what you eat when you make your own pasta! With this quick article you should be able to make your own pasta in no time at all!
Stuff that you will need:
(for about 4 servings of pasta)
400g (14oz) flour. (At the moment we plain flour, but we have seen some pasta flours and duram flours out there so try a few and choose your weapon!)
4 medium eggs
olive oil
a touch of water
There are generally two ways to start the process. You can either go the bowl way (which is recommended for the particularly messy) or you can create a “well” from the flour and use that as a makeshift bowl.
To use the bowl method, simply pour the flour in one bowl and create a hole in the centre. Put the eggs in another bowl and beat them with a fork. Then throw the beaten eggs into the flour.
Using the flour well method, simply mound the flour on a clean working surface and make a well in the centre. Then break the eggs into the centre, and beat with a fork, being careful not to mix the eggs with the flour.
Using either of these above methods get you to the next step.
Once the beaten eggs are with the flour, add 1 tbsp of cold water and 1 or 2 tsp of oil.
Gradually work in the egg/water/oil mixture with the flour using your hands (get your hands dirty!). The dough will become stiff eventually and then you will have to knead it for about 10 minutes.
The dough should be stiff, and if you think that it is too soft, just add more flour.
After about 10 minutes, roll the dough into a ball and then flatten out with a rolling pin.
This is an important point when you make your own pasta. Get that dough as thin as possible! Pasta becomes much thicker when you cook it so make sure your dough is almost transparent when rolled out!
Once you have your base of pasta, it is up to you how you want to cut and shape it.
For simplicity, tagliatelle can be made by rolling your flat pasta base into a cylinder, then slicing it into 1cm sections. Unroll the sections and there you go!
Let the pasta sit in the open for a while to dry and you’ll have your own homemade pasta!
Cook the pasta the same as you would any other pasta, just remember that it does not take as long as dried pasta!
