make your own mayonnaise

photo by fotoosvanrobinMaking your own mayonnaise is easy and the taste difference is incredible. This mayonnaise can be used just like any you would buy from the shops. It takes about 15 minutes to make, and you can store it for 3 days. This particular recipe is one that Gordon Ramsey uses, so you can be sure of the quality!

To make about 300ml you’ll need:

2 large egg yolks
1 tsp white wine vinegar
1 tsp English or Dijon mustard
salt and pepper
300ml groundnut oil

Firstly, seperate the egg whites from the egg yolks.

Put the yolks, white wine vinegar, mustard and a pinch of salt into a food processor (it helps if you have an attachment for smaller quantities). Blend for a few minutes until they’re thick and creamy.

Next is the major step in getting good quality mayonnaise.

SLOWLY trickle the groundnut oil into to mixture with the motor still running. Do this as slow as possible and let the blender do the mixing for you. Keep this up until the mayonnaise is emulsified and your desired thickness.

Add some salt and pepper and you’re done!

To store, place in a bowl or jar, cover and refrigerate.
