cook your own butternut squash soup

Photo by Ewan-MButternut squash is a very healthy vegetable. Combined with a few other healthy ingredients, you can make a super healthy super tasty soup! Quick and easy to make, this can be a great appetiser for a dinner party.

To make about 8 servings you’ll need

1 Butternut Squash
3 medium carrots
3 medium sweet potatoes
1 onion
2 cloves garlic
1 teaspoon ground cumin
1 teaspoon ground coriander
1 tablespoon vegetable oil
1 vegetable stock cube
Approx 2 pints water

Peel the squash, carrots, potatoes and onion and cut into large chunks. Peel and finely chop the garlic.

Let the vegetable cube dissolve in hot water while doing the next few steps.

Put the oil into a large soup pan on a medium heat. Add the onion and garlic to the pan and gently fry for a couple of minutes until soft. Add the coriander and cumin and stir through.

Add all of vegetables to the pan and stir for 1 minute.

Add the vegetable stock to the pan and top up with more water until the vegetables are covered.

Keep the pan on a low-med heat and cook until the vegetables are soft.

Allow to cool and then blend with a processor giving a nice thick soup.

Reheat when required and serve with crusty bread.
